Creamy Seafood Salad

Mayonnaise  : 125 ml (aquality  mayonnaise makes all the difference).

Fresh cream or Greek yogurt: 30 ml. This adds a slight acidity and lightens the texture of the sauce.

Lemon juice: 15 ml of freshly squeezed juice to counterbalance the richness of the lemon.

Fresh dill: 15 ml, finely chopped. Dill is the secret ingredient that enhances seafood.

Seasoning: A pinch of salt, cracked black pepper and, if desired, a little Old Bay seasoning for a classic coastal flavour.

Preparation :

1. Preparing the seafood: Start by crumbling the surimi. If you bought flaked surimi, you can gently shred it by hand or roughly chop it with a knife. Place everything in a large bowl.

2. Add the herbs. Stir in the finely chopped celery and sliced ​​spring onions. For an extra touch of color and sweetness, add a tablespoon of finely chopped red bell pepper.

3. Prepare the vinaigrette. In a small bowl, whisk together the mayonnaise, crème fraîche, lemon juice, chopped dill, and seasonings. Taste the vinaigrette: it should be light, creamy, and well-seasoned.

4. Mix and chill. Pour the vinaigrette over the crab and vegetables. Gently toss until each piece is well coated.

5. The crucial step: chilling. You can enjoy this dish immediately, but it’s significantly better after 30 minutes to an hour in the refrigerator. This allows the flavors to meld and the seafood to absorb the seasonings.

Tips for guaranteed success:

Don’t overmix: it’s important to preserve the crab’s texture. Turn it over gently to prevent the mixture from turning into a mushy paste.

Drain excess liquid: if your imitation crab seems very wet when you take it out of the package, dry it by dabbing it with absorbent paper before mixing it to keep the sauce smooth and creamy.

Serving suggestions: Serve this dish on a bed of lettuce, in toasted rolls for a “poor man’s lobster roll”, or with buttered crackers for a simple starter.
