Directions

1. Lightly coat the inside of a slow cooker with nonstick spray if desired, then arrange the pork chops in an even layer inside.

2. In a small bowl, whisk together the maple syrup, Dijon mustard, and soy sauce until smooth and fully combined.

3. Pour the sauce evenly over the pork chops, cover, and cook on low for 4 to 6 hours or until the pork is tender and cooked through.

4. Spoon some of the sauce over the pork chops before serving, and plate with your favorite side dishes.

Variations & Tips

Use boneless chops: Boneless pork chops work too, but they can cook a little faster and may not stay quite as juicy as bone-in. Start checking them earlier so they do not overcook.

Thicken the sauce: If you want more of a gravy-like finish, transfer the cooking liquid to a small saucepan after the pork is done and simmer it for a few minutes. You can also whisk in a little cornstarch slurry until it reaches your favorite consistency.

Add a little garlic: This is technically more than four ingredients, but one minced garlic clove or a small spoonful of garlic paste adds great depth without changing the easy feel of the recipe.

Meal prep tip: You can whisk the sauce together the night before and keep it in the fridge, then just pour it over the pork chops in the morning. That shortcut makes this recipe especially handy on busy workdays.

Balance the sweetness: If you prefer a tangier sauce, increase the Dijon slightly or add a tiny splash of apple cider vinegar. If you like it sweeter, drizzle a little extra maple syrup over the chops right before serving.
