Roasted Broccoli, Kale & Tomato Vegetable Casserole
A colourful, comforting, low-calorie vegetable casserole that’s packed with broccoli, baby kale, tomatoes, onion, and garlic! This easy baked dish is full of savoury flavour, naturally rich in vegetables, and makes a wonderful light lunch, dinner, or side dish.
The vegetables become tender and slightly caramelised in the oven while the tomatoes release their juices, creating a deliciously flavourful casserole without needing a heavy sauce. It is simple enough for beginners and versatile enough to customise with your favourite vegetables, herbs, or a little cheese.
