Roasted Broccoli, Kale & Tomato Vegetable Casserole

Add:

Salt
Black pepper
Italian seasoning
Paprika
Garlic powder
Red pepper flakes, if using
Toss thoroughly until the vegetables are evenly coated.

5. Add the Garlic
Add the minced garlic and toss again.

Spreading the garlic throughout the vegetables allows it to roast and infuse the casserole with a wonderful savoury aroma.

If you prefer a milder garlic flavour, reduce the amount.

6. Add the kale.
Add the baby kale.

Toss gently.

Don’t worry if it looks like too much kale at first—the leaves will shrink considerably as they cook.

7. Transfer to the Baking Dish
Spread the vegetables evenly in the prepared baking dish.

Try not to pile everything into one very deep mound.

A relatively even layer allows the vegetables to roast rather than steam.

8. Bake
Place the casserole in the preheated oven.

Bake uncovered for approximately 25–30 minutes.

After about 15 minutes, carefully stir the vegetables.

Return the casserole to the oven and continue baking.

The broccoli should become tender with slightly browned edges, the onions should soften, and the tomatoes should become juicy and lightly roasted.

9. Add Cheese, If Desired
If you’re using cheese, sprinkle it over the vegetables during the final 5–8 minutes of baking.

Return the dish to the oven until the cheese melts and becomes lightly golden.

For a lighter version, simply leave the cheese out.
